Mustardy Bean Salad

Ingredients:
- 1 15 oz can of cannellini beans, drained and rinsed
- ½ tbsp country mustard (or regular dijon)
- ½ tbsp grainy mustard
- ¼ cup chopped herbs (parsley, dill, cilantro)
- 2 tbsp olive oil
- Zest of ½ lemon
- Juice of ½ lemon, more to taste
- ½ tsp chili flakes
- Salt and pepper to taste
Directions:
- In a medium bowl, combine the beans, grainy and country mustards, herbs, olive oil, lemon zest and juice, chili flakes, salt, and pepper. Mix to combine and adjust seasoning as needed.
- Serve the beans by itself or with bread.
