Mustardy Bean Salad

Ingredients:

  • 1 15 oz can of cannellini beans, drained and rinsed
  • ½ tbsp country mustard (or regular dijon)
  • ½ tbsp grainy mustard
  • ¼ cup chopped herbs (parsley, dill, cilantro)
  • 2 tbsp olive oil
  • Zest of ½ lemon
  • Juice of ½ lemon, more to taste
  • ½ tsp chili flakes
  • Salt and pepper to taste

Directions:

  1. In a medium bowl, combine the beans, grainy and country mustards, herbs, olive oil, lemon zest and juice, chili flakes, salt, and pepper. Mix to combine and adjust seasoning as needed.
  2. Serve the beans by itself or with bread.
