Herby Tuna Salad with Cabbage Scoops

Ingredients:

Tuna salad ingredients
  • 2 4-oz cans tuna in olive oil, drained
  • 3 tbsp mayo
  • 1 tbsp dijon or country mustard
  • ½ stalk celery, finely chopped
  • ¼ cup chopped basil
  • ¼ cup chopped pickles
  • ¼ cup chopped dill
  • ¼ cup chopped parsley (stems included)
  • 1 small shallot, chopped (can use red or green onion)
  • Zest of one lemon
  • Juice of 1 lemon (start with one half, adjust after tasting)
  • ½ tsp chili flakes
  • Salt & pepper, to taste
To serve
  • 3-4 cabbage leaves, washed and chopped into 2-3 inch pieces
  • Olive oil
  • Flaky salt

Directions:

  1. In a large bowl, mash the drained tuna to desired texture.
  2. Add the remaining tuna salad ingredients. Mix well and adjust seasoning and acid levels to taste.
  3. Serve on a large plate alongside the cabbage leaves. Drizzle the whole dish with olive oil and a sprinkle of flakey salt.
