Chocolate Cardamom Chia Pudding with Vanilla Coconut Yogurt

Ingredients:
- ¼ cup chia seeds
- 1 cup milk (I use almond)
- 2 tbsp cocoa or cacao powder
- Pinch of salt
- 4 cardamom pod seeds, crushed (or ¼ tsp ground cardamom)
- 3 tbsp maple syrup or honey
- 4 - 6 oz coconut yogurt
- 1 tsp vanilla extract (or vanilla bean paste)
- Toppings: fruit, granola, nuts, cacao nibs
Directions:
- In a large jar or bowl, whisk together the chia seeds, collagen powder, cardamom, salt, and cacao powder. Then add the almond milk and 2 tbsp maple syrup. Whisk well.
- Let stand for 10-15 minutes, then whisk again until no clumps remain. Refrigerate overnight in the fridge (or at least 4 hours).
- 4 hours later, or the next day, stir the chia pudding once more and divide into bowls.
- In a small bowl, combine the coconut yogurt, vanilla, and a tbsp of maple syrup. Top the chia pudding with the coconut yogurt mixture.
- Top with fruit, nuts, or other toppings as desired.
