Frozen Watermelon Jalapeño Margarita
Frozen Watermelon Jalapeño Margarita
Prep Time: 15 - 20 minutes
Cook Time: 45 minutes
Servings: 3 - 4
Ingredients:
- 8 oz of tequila
- 4 limes
- ½-1 jalapeño, seeds removed
- 4 cups frozen watermelon, cubed
- 2 tbsp agave
- 2 tbsp Tajin
- 2 tbsp kosher salt
- Lime slices, for garnish
- Jalapeño slices, for garnish
Directions:
- AT LEAST 6 HOURS BEFORE: Cut up the watermelon into cubes and place on a parchment lined baking tray. Spread the cubes out so they're not touching, and place in the freezer.
- On a small plate or bowl, mix the Tajin and kosher salt together.
- Rub lime juice around the outside of your cocktail glass and roll in the Tajin and salt mixture. Set aside.
- Cut the outer skin off the limes. Alternatively, you can juice the limes if you don’t want to add the flesh.
- In a large blender, add the frozen watermelon, tequila, jalapeño, agave, and limes.
- Starting slow, blend the mixture and increase the speed to high. Taste and adjust with more agave or jalapeño depending how spicy/sweet you like it.
- Pour into the prepared glasses and garnish with a wedge of lime and a slice of jalapeño.
