Tamari Braised Cabbage with Tahini Sauce

Ingredients:
Braised cabbage
- ½ head of purple or green cabbage, cut into thirds or quarters (core intact)
- 2 tbsp neutral oil
- ½ cup water or chicken/veggie stock
- 2 tbsp tamari
- ½ tsp white pepper
- 1 tsp sesame oil
- 2 garlic cloves, minced
Tahini sauce
- ¼ cup tahini
- Juice of ½ lime, more to taste
- 2 tsp honey
- 2-3 tablespoons water, to desired consistency
- Salt, to taste
To serve
- Cilantro
- Green onions
- Sesame seeds
- Chili oil
Directions:
- Preheat oven to 375 F.
- Heat a cast iron pan over medium-high heat. Add neutral oil. Once hot, place the cabbage slices and sear for 4-5 minutes, until deeply golden. Flip and cook on the other side.
- While the cabbage is searing, whisk together the water, tamari, white pepper, sesame oil, and garlic cloves.
- Once both sides are nicely seared, remove the pan from the heat and pour in the sauce. Spoon the sauce over the cabbage. Place in the oven and cook for 10 minutes.
- Flip the cabbage pieces and continue cooking until the cabbage is tender, about 12 more minutes.
- Whisk together all the tahini sauce ingredients. Spread the sauce on a plate and top with the braised cabbage. Garnish with herbs, sesame seeds, and chili oil.
