Spicy Sesame Cucumber Salad

Ingredients:
- 1 large seedless cucumber, thinly sliced
- 1 tbsp kosher salt
- 1 garlic clove, minced
- 2 tbsp rice vinegar
- 1/2 tbsp sesame oil
- 2-3 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp toasted sesame seeds
- 3 tbsp toasted peanuts, finely chopped
- ½ cup cilantro leaves
- 2 scallions, finely chopped
- 1 -2 tsp chili oil (optional)
Directions:
- Add the thinly sliced cucumbers to a large colander. Sprinkle with the salt and toss thoroughly. Set aside for the liquid to drain for 20 minutes.
- In a large bowl, whisk together the garlic clove, rice vinegar, sesame oil, soy sauce, fish sauce, and optional chili oil. Stir in the sesame seeds, peanuts, cilantro leaves, and scallions.
- Lay the cucumbers out on a kitchen towel and pat dry. Add the cucumbers to the large bowl and toss with the sauce. If you have time, let the salad marinate in the fridge for 30 minutes before consuming.
