Spiced Pecan, Walnut, and Pumpkin Seed Butter

Cook Time: 12 - 18 minutes

Servings: 12 oz jar

Ingredients:

  • 2 cups raw pecan halves
  • 1 cups raw walnuts
  • 1 cup raw pumpkin seeds/pepitas
  • 1 tsp kosher salt
  • 1 tsp cinnamon
  • ½ tsp cardamom
  • ¼ tsp ground cloves
  • ¼ tsp ground ginger
  • ¼ tsp nutmeg
  • 1 tsp vanilla

Directions:

  1. Preheat the oven to 325 F.
  2. Line two baking sheets with parchment paper. Spread out the pecans and walnuts on one baking sheet, and the pumpkin seeds on the other.
  3. Roast the nuts for 12-18 minutes, tossing the nuts every few minutes. For me, the walnuts and pecans were deeply roasted after 14 minutes, and the pumpkin seeds after 18.
  4. Let the nuts cool slightly, then add to a high speed blender or food processor with the salt.
  5. Blend starting on low, then increase the speed to medium. Blend until completely smooth, scraping down the sides a few times to get any remaining chunks.
  6. Add the spices and vanilla and blend to combine.
  7. Store in a glass container and seal with a lid once the nut butter has cooled.
