Peach Mezcal Mule

Ingredients:
- 4 oz mezcal
- 2 oz peach ginger puree
- 8 oz ginger beer
- Ice
- Peach slices and ginger, to garnish
Peach ginger puree
- 3 peaches, pits removed and cubed
- 1 inch knob ginger, thinly sliced
- 2 tbsp honey
- 1 tbsp sugar
- 3 tbsp water
Directions:
- PEACH GINGER PUREE: To a medium saucepan, add the peach ginger puree ingredients. Bring to a boil over medium-high heat, and then reduce to a simmer. Cook until the peaches are soft and jammy, about 20-30 minutes.
- Cool the mixture completely. Remove the ginger pieces then add the cooked peaches to a small blender and puree until smooth.
- In 2 highball or moscow mule cups, add (to each) 2 oz mezcal and 1 oz peach ginger puree. Stir to combine. Add the ice and top with 4 oz of ginger beer each. Garnish with a peach and ginger slice.
