Peach Mezcal Mule

Ingredients:

  • 4 oz mezcal
  • 2 oz peach ginger puree
  • 8 oz ginger beer
  • Ice
  • Peach slices and ginger, to garnish
Peach ginger puree
  • 3 peaches, pits removed and cubed
  • 1 inch knob ginger, thinly sliced
  • 2 tbsp honey
  • 1 tbsp sugar
  • 3 tbsp water

Directions:

  1. PEACH GINGER PUREE: To a medium saucepan, add the peach ginger puree ingredients. Bring to a boil over medium-high heat, and then reduce to a simmer. Cook until the peaches are soft and jammy, about 20-30 minutes.
  2. Cool the mixture completely. Remove the ginger pieces then add the cooked peaches to a small blender and puree until smooth.
  3. In 2 highball or moscow mule cups, add (to each) 2 oz mezcal and 1 oz peach ginger puree. Stir to combine. Add the ice and top with 4 oz of ginger beer each. Garnish with a peach and ginger slice.
