Farmer’s Cheese and Fresh Strawberries with Thyme Orange Balsamic Reduction

Servings: 3-4

Ingredients:

Thyme orange balsamic reduction
  • ½ cup balsamic vinegar
  • 2 tbsp honey
  • 1-2 orange peels
  • 4-5 twigs fresh thyme
To serve
  • 4 cups fresh strawberries, quartered
  • 6 oz farmer’s cheese
  • 4-6 slices toasted bread
  • Flaky salt
  • Extra virgin olive oil
  • Fresh thyme for garnish

Directions:

  1. Place the chopped strawberries in a bowl. Sprinkle generously with salt. Set aside.
  2. THYME ORANGE BALSAMIC REDUCTION: Combine the balsamic reduction ingredients in a small saucepan. Place over medium heat and stir to combine.
  3. Once the mixture has reached a calm boil, turn the heat down to low.
  4. Simmer for 12-15 minutes, stirring often. After 12 minutes, dip a spoon or spatula into the reduction. Cool for a minute, then run your finger through it. If the reduction holds shape and a streak remains, the reduction is ready. If not, continue to check every minute.
  5. Cut the heat and strain the reduction through a sieve into a small bowl.
  6. ASSEMBLE: On a serving plate or bowl, spread the farmer’s cheese. Pour the salted strawberries on top.
  7. Drizzle olive oil over the top. Spoon the balsamic reduction over the strawberries. Garnish with fresh thyme leaves.
  8. Finish with a sprinkle of flaky salt. Serve with grilled or toasted bread.
