Farmer’s Cheese and Fresh Strawberries with Thyme Orange Balsamic Reduction

Ingredients:
Thyme orange balsamic reduction
- ½ cup balsamic vinegar
- 2 tbsp honey
- 1-2 orange peels
- 4-5 twigs fresh thyme
To serve
- 4 cups fresh strawberries, quartered
- 6 oz farmer’s cheese
- 4-6 slices toasted bread
- Flaky salt
- Extra virgin olive oil
- Fresh thyme for garnish
Directions:
- Place the chopped strawberries in a bowl. Sprinkle generously with salt. Set aside.
- THYME ORANGE BALSAMIC REDUCTION: Combine the balsamic reduction ingredients in a small saucepan. Place over medium heat and stir to combine.
- Once the mixture has reached a calm boil, turn the heat down to low.
- Simmer for 12-15 minutes, stirring often. After 12 minutes, dip a spoon or spatula into the reduction. Cool for a minute, then run your finger through it. If the reduction holds shape and a streak remains, the reduction is ready. If not, continue to check every minute.
- Cut the heat and strain the reduction through a sieve into a small bowl.
- ASSEMBLE: On a serving plate or bowl, spread the farmer’s cheese. Pour the salted strawberries on top.
- Drizzle olive oil over the top. Spoon the balsamic reduction over the strawberries. Garnish with fresh thyme leaves.
- Finish with a sprinkle of flaky salt. Serve with grilled or toasted bread.
