Citrus Salad with Burrata

Ingredients:

  • 3 lbs citrus (blood orange, sumo, navel, mandarin, clementine, etc)
  • 1-2 balls of burrata
  • ¼ cup toasted pistachios, chopped
  • 12-15 mint leaves
  • ¼ cup extra virgin olive oil
  • Flaky salt

Directions:

  1. Slice orange ends off, and turn on the flat side. Cut the outer peel off, exposing the flesh of the orange.
  2. Slice oranges into rounds, about 1 cm thick.
  3. Lay out the oranges on a large plate and drizzle with about 3 tbsp olive oil and sprinkle flaky salt.
  4. Place burrata in the middle. Drizzle with 1 tbsp olive oil.
  5. Sprinkle chopped pistachios and mint leaves over the burrata and oranges.
  6. Serve alone or with bread.
