Ingredients:
Snap pea juice
- 12 oz bag snap peas, a few removed for garnish
- 1 ½ cups water
Snap pea margaritas
- 4 oz sumo citrus-infused blanco tequila (or regular blanco tequila)
- 2 oz cointreau
- 3 oz snap pea juice
- 2 oz fresh lime juice
- Tajin for the rim
- Ice
- Radish & snap peas for garnish
Directions:
- SNAP PEA JUICE: Add the snap peas and water to a blender. Blend until completely smooth, then strain through a cheesecloth or nut milk bag. Store in the fridge until ready to use.
- MAKE THE COCKTAILS: Prepare 2 cocktail glasses by rimming them with lime juice and tajin. Set aside.
- To a cocktail shaker, add the tequila, cointreau, snap pea juice, and lime juice. Add a large handful of ice.
- Shake the cocktail for at least a minute, until the shaker is very cold.
- Add some ice to the cocktail glasses (or serve it up with no ice). Strain the margarita into the glass.
- Garnish with a radish on the rim and a snap pea.
