Snap Pea Margarita

Ingredients:

Snap pea juice
  • 12 oz bag snap peas, a few removed for garnish
  • 1 ½ cups water
Snap pea margaritas
  • 4 oz sumo citrus-infused blanco tequila (or regular blanco tequila)
  • 2 oz cointreau
  • 3 oz snap pea juice
  • 2 oz fresh lime juice
  • Tajin for the rim
  • Ice
  • Radish & snap peas for garnish

Directions:

  1. SNAP PEA JUICE: Add the snap peas and water to a blender. Blend until completely smooth, then strain through a cheesecloth or nut milk bag. Store in the fridge until ready to use.
  2. MAKE THE COCKTAILS: Prepare 2 cocktail glasses by rimming them with lime juice and tajin. Set aside.
  3. To a cocktail shaker, add the tequila, cointreau, snap pea juice, and lime juice. Add a large handful of ice.
  4. Shake the cocktail for at least a minute, until the shaker is very cold.
  5. Add some ice to the cocktail glasses (or serve it up with no ice). Strain the margarita into the glass.
  6. Garnish with a radish on the rim and a snap pea.
