Savory Sourdough Discard Pancakes with Herby Crème Fraîche

Ingredients:
Za’atar sourdough starter pancake
- 1 cup active sourdough starter discard, room temperature
- 1 tbsp za’atar
- 1 tsp salt
- 2-3 tbsp olive oil, more as needed
Herby crème fraîche
- ½ cup crème fraîche (or yogurt)
- 1 tbsp chopped chives
- 1 tbsp chopped dill
- ½ lemon, zested
- Salt and pepper to taste
To serve
- Smoked salmon
- Arugula
- Lemon wedges
- Poached eggs
Directions:
- ZA'ATAR SOURDOUGH DISCARD PANCAKE: In a medium sized bowl, mix the sourdough starter with za’atar and salt. Set aside to rest for 10 - 15 minutes.
- Heat a small saucepan over medium heat. Add 2-3 tbsp olive oil to coat the bottom of the pan.
- Once hot, add the sourdough batter. If it’s very thick, wet your fingers to press it down to the edge of the pan.
- Lower the temperature to medium-low, and cook for 5-7 minutes. Once the edges are set and bubbles form, flip the pancake.
- If the pan is looking dry, add more olive oil on the outside of the pan.
- Once the pancake is golden on the second side, set aside on a plate.
- HERBY CRÈME FRAÎCHE: To a small bowl, mix together the crème fraîche, lemon zest, chives, and dill. Adjust to taste with salt and pepper.
- SERVE: Place the pancake on your serving plate and top with a big spoonful of herby crème fraîche, smoked salmon, poached egg, and arugula. Feel free to use whatever toppings you have on hand.
