Salted Sweet Potato Banana Bread

Ingredients:

  • 2 ripe bananas
  • ½ cup mashed japanese sweet potato, roasted or steamed then cooled
  • 1 large egg
  • ⅓ cup melted butter, or oil of choice
  • ⅓ cup maple syrup
  • 1 tbsp vanilla paste or extract
  • 1 ½ cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • Optional add-ins or add-ons: flaky salt, chocolate chips, chopped walnuts, etc

Directions:

  1. Preheat the oven to 350°F (180°C). Line an oiled loaf pan with parchment paper.
  2. In a large mixing bowl, mash the bananas and sweet potato together.
  3. Add the maple syrup, melted butter, egg, and 1 tbsp vanilla. Whisk until well combined.
  4. Sift in the flour, baking soda, and salt. Fold until just combined. A few clumps of flour are fine; avoid overmixing the batter.
  5. Top with flaky sea salt or optional toppings and bake for 40-45 minutes, until a toothpick comes out clean.
  6. Allow to cool for 10 minutes, slice, and serve.
