Sage Peppercorn Gin Sour

Servings: 2

Ingredients:

  • 4 oz gin (I used Botanist)
  • 1 oz egg whites
  • 1 oz sage peppercorn simple syrup
  • 2 oz lemon juice
  • Ice
  • Sage leaves
  • Angostura bitters
Sage peppercorn simple syrup
  • ½ cup sugar
  • ½ cup water
  • 6 black peppercorns
  • 5-6 sage leaves

Directions:

  1. SAGE PEPPERCORN SIMPLE SYRUP: In a small saucepan, combine the sugar, water, and black peppercorns over medium heat.
  2. Bring to a simmer, then add the sage leaves. Continue to simmer for 1 minute, then remove from the heat and allow the peppercorns and sage to steep for 30-60 minutes.
  3. Strain the simple syrup into a jar or container and keep in the fridge.
  4. MAKE THE COCKTAIL: In a cocktail shaker, add the gin, lemon juice, egg whites, and sage peppercorn simple syrup. Shake vigorously for 1-2 minutes.
  5. Remove the lid and add a generous handful of ice. Put the lid on and shake vigorously.
  6. Strain the cocktail into two chilled coupe glasses. Garnish with a few angostura drops and sage leaves.
