Sage Peppercorn Gin Sour

Ingredients:
- 4 oz gin (I used Botanist)
- 1 oz egg whites
- 1 oz sage peppercorn simple syrup
- 2 oz lemon juice
- Ice
- Sage leaves
- Angostura bitters
Sage peppercorn simple syrup
- ½ cup sugar
- ½ cup water
- 6 black peppercorns
- 5-6 sage leaves
Directions:
- SAGE PEPPERCORN SIMPLE SYRUP: In a small saucepan, combine the sugar, water, and black peppercorns over medium heat.
- Bring to a simmer, then add the sage leaves. Continue to simmer for 1 minute, then remove from the heat and allow the peppercorns and sage to steep for 30-60 minutes.
- Strain the simple syrup into a jar or container and keep in the fridge.
- MAKE THE COCKTAIL: In a cocktail shaker, add the gin, lemon juice, egg whites, and sage peppercorn simple syrup. Shake vigorously for 1-2 minutes.
- Remove the lid and add a generous handful of ice. Put the lid on and shake vigorously.
- Strain the cocktail into two chilled coupe glasses. Garnish with a few angostura drops and sage leaves.
