Pomegranate Dark Chocolate Chia Pudding

Ingredients:

  • ¾ cup canned full fat coconut milk
  • ¼ cup pomegranate juice
  • 2 tbsp cocoa powder (dutch processed or cacoa powder would work fine too)
  • 2 tbsp maple syrup
  • 1 tsp vanilla
  • Pinch of salt
  • ¼ cup chia seeds
  • Jamie’s Farm Pomegranate Granola with Dark Chocolate (or granola of choice)
  • Full-fat yogurt, to top
  • Pomegranate seeds

Directions:

  1. In a medium sized jar or container, whisk together the canned coconut milk, pomegranate juice, cocoa powder, maple syrup, vanilla, and a pinch of salt. Stir in the chia seeds.
  2. Allow the chia seeds to sit for 15 minutes, stir again, and then cover and place in the fridge for 4 hours up to overnight.
  3. Serve the chia pudding with Jamie’s Farm Pomegranate Chocolate Granola, a scoop of yogurt, and a sprinkle of pomegranate seeds.
