Pickled Grape Burrata Toast

Ingredients:
Pickled grape compote
- 2 cups pickled grapes
- 1/4 cup water
- 1/4 cup pickling liquid
- 1 tbsp olive oil
Marinated pine nuts & basil
- 1 cup basil leaves
- 1/4 cup toasted pine nuts
- 1/4 cup olive oil
- Salt and pepper
To serve
- 2 balls of burrata
- 4 slices of bread, toasted
Directions:
- Add the pickled grapes, grape pickling liquid, water, and olive oil to a small pot. Place over a medium heat.
- Simmer, stirring occasionally, and mash some of the grapes as it simmers. Continue cooking until it creates a jammy, loose compote, about 10-14 minutes total. Set aside to cool slightly.
- Chiffonade the basil leaves and add them to a bowl along with the pine nuts, and olive oil. Season with a large pinch of salt and lots of cracked pepper. Stir together.
- Spread 1/2 a ball of burrata on each toast and spoon the warm grapes over the burrata. Top with the marinated pine nuts & basil and serve immediately.
