Ingredients:

  • 4 ripe bananas (340 g)
  • ⅓ cup olive oil
  • ½ cup honey (sub maple syrup)
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 cup all purpose flour (120 g)
  • ½ cup whole wheat flour (60 g)
  • ½ tbsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • ¼ cup pecans, chopped (sub walnuts or nut of choice)
  • 2 tbsp turbinado sugar

  4. Crack in both eggs and the vanilla extract, then whisk until fully incorporated.
  5. Fold in the dry ingredients until few flour bits remain. Pour into the prepared tin and top with the pecans and turbinado sugar.

  7. Allow to cool 10-15 minutes before slicing and serving.
