Olive Oil Honey Banana Bread

Ingredients:
- 4 ripe bananas (340 g)
- ⅓ cup olive oil
- ½ cup honey (sub maple syrup)
- 2 eggs
- 1 tbsp vanilla extract
- 1 cup all purpose flour (120 g)
- ½ cup whole wheat flour (60 g)
- ½ tbsp ground cinnamon
- 1 tsp baking soda
- 1 tsp kosher salt
- ¼ cup pecans, chopped (sub walnuts or nut of choice)
- 2 tbsp turbinado sugar
Directions:
- Preheat the oven to 350 F and line and grease an 8x4 loaf tin with parchment paper.
- In a medium bowl, whisk together the all purpose flour, whole wheat flour, ground cinnamon, baking soda, and kosher salt. Set aside.
- In a large bowl, mash the bananas until a few small chunks remain. Whisk in the olive oil and honey until combined.
- Crack in both eggs and the vanilla extract, then whisk until fully incorporated.
- Fold in the dry ingredients until few flour bits remain. Pour into the prepared tin and top with the pecans and turbinado sugar.
- Bake the loaf for 45-55 minutes, flipping the tin halfway through, until a skewer or knife comes out with minimal crumbs.
- Allow to cool 10-15 minutes before slicing and serving.
