Oh Henry Bars (Peanut Butter Chocolate Oat Bars)
Oh Henry Bars

Servings: 16-24 bars
Ingredients:
- ⅔ cup unsalted butter
- ½ tbsp white or yellow miso
- 1 cup coconut sugar
- ½ cup agave or maple syrup
- 1 tbsp vanilla extract or paste
- 4 cups oats
- 3 tbsp hemp hearts (optional)
- 8 oz dark chocolate, chopped
- 2 oz white chocolate, chopped
- ½ cup peanut butter
- Flaky salt
Directions:
- Preheat the oven to 370 F. Line a square or rectangular glass baking dish with parchment paper (I suggest 8 x 13 inches or 9x9 inches for thicker bars).
- Place the butter in a saucepan over medium heat, stirring constantly until light brown flecks form. Once it smells nutty and the specks have darkened to a deep brown, pour the browned butter into a large bowl and cool for 10-15 minutes. Whisk in the miso paste.
- Add the coconut sugar, maple syrup, vanilla, oats, and hemp hearts. Stir to combine. Press into the prepared pan and bake for 12 minutes. Remove from the oven and cool completely.
- Melt the chocolate and peanut butter together over a double boiler or in the microwave, stirring every 30 seconds. Spread over the oat layer.
- Melt the white chocolate over a double boiler or in the microwave. Swirl into the chocolate layer. Place in the fridge for a couple hours until the top is hardened.
- Lift the oat chocolate bars out of the pan using the parchment. Cut into squares and sprinkle each with flaky salt.
- Keep in the fridge for up to a week, or in the freezer for up to 3 months.
