Mortadella Sandwich with Preserved Lemon Basil Aioli

Ingredients:
Preserved lemon basil aioli
- 2 egg yolks
- 1 tbsp preserved lemon, finely chopped
- 1 tsp dijon mustard
- 2 garlic cloves, finely chopped
- ¼ cup fresh basil, finely chopped
- ½ cup olive oil

Mortadella sandwiches
- Bread of choice, sliced
- Mortadella slices
- Tomato slices, salted
- Crunchy lettuce, like romaine or iceberg
- Fresh mozzarella, sliced
- Cornichons, sliced lengthwise
Directions:
- PRESERVED LEMON BASIL AIOLI: Add the egg yolks, preserved lemon, dijon, basil, and garlic to a small food processor. Pulse until thoroughly combined.
- Slowly dribble in the olive oil until emulsified. Season to taste with salt.
- ASSEMBLE: Lightly toast the bread. Spread the aioli on both inner sides of the bread. Layer the mortadella slices, cheese, lettuce, and tomatoes and cornichons. Top with the other side of the bread.
