Lamb Feta Meatballs with Sandwich Fixin’s

Ingredients:

Lamb Feta Meatballs
  • 1 lb ground lamb
  • ½ cup panko
  • 1 large egg
  • ½ yellow or white onion, grated
  • ¼ cup parsley, finely chopped
  • ⅓ cup crumbled feta
  • ½ tsp fennel seeds, roughly chopped
  • 1 ½ tsp cumin
  • ½ tsp black pepper
  • ½ tsp cinnamon
  • ½ tsp allspice
  • 1 ½ tsp salt
  • Pomegranate molasses
  • 2 tbsp olive oil or ghee

Fennel Cabbage Slaw
  • ½ red cabbage, thinly sliced
  • ½ fennel, thinly sliced
  • 1 shallot, thinly sliced
  • ½ tbsp dried mint
  • Juice of 1 lemon
  • ¼ cup red wine vinegar
  • ½ cup olive oil
  • 1 tbsp honey
  • 1 tsp salt
  • 1 garlic clove, minced
  • 1 tbsp dijon mustard
Fixin's
  • Pita bread
  • Hummus
  • Pickles
  • Sliced tomatoes
  • Sliced cucumbers
  • Herbs (parsley, mint, dill)
  • Pickled onions

Directions:

  1. Fennel Cabbage Salad: In a jar, combine the lemon juice, red wine vinegar, honey, minced garlic, mustard, olive oil, and salt. Shake to combine.
  2. In a large bowl, toss the sliced cabbage, shallot, and fennel with the dressing. Set aside.
  3. Lamb Feta Meatballs: Turn the oven on to broil.
  4. In a large bowl, add all the lamb meatball ingredients except the pomegranate molasses and cooking oil. Mix thoroughly together until well combined.
  5. Form the mixture into small meatballs, about 1 ½ inches in diameter.
  6. Heat a large cast iron over medium high heat with the oil or ghee. Once shimmering, add the meatballs. Be careful not to overcrowd the pan.
  7. Cook the meatballs for a few minutes on each side, until deeply caramelized and brown. Transfer the meatballs to a parchment lined baking tray.
  8. Drizzle each meatball with pomegranate molasses, and broil for 2-3 minutes. Keep an eye on it so it doesn’t burn. Remove from the oven.
  9. Open a pita bread and line the inside with hummus. Place the lamb meatballs, some slaw, and any additional fixin’s inside the pita. Finish with a drizzle of pomegranate molasses. I love to serve this with fries or potato wedges.
