Furikake Tuna Salad Sandwich

Ingredients:
Furikake tuna salad
- 1 4 oz can of tuna, packed in olive oil
- 1 tbsp kewpie mayo (or mayo of choice)
- 1-2 tsp sriracha
- Juice of ½ lemon, more to taste
- 3-4 sprigs dill, finely chopped
- 1 tbsp furikake
- 1 stalk green onion, finely chopped
- 1 tbsp chopped pickled ginger
- Salt & pepper, to taste
To serve
- 4 slices bread, toasted
- Avocado slices
- Crispy lettuce
- Thinly sliced cucumber
- More furikake
Directions:
- Mash the canned tuna in a bowl with a fork until there are only small chunks.
- Add kewpie mayo, sriracha, lemon juice, dill, furikake, green onion, pickled ginger, and a pinch of salt and pepper. Mix until completely incorporated. Adjust with salt, pepper, and more lemon to taste.
- Spread the tuna salad on toasted bread. Place mashed or sliced avocado on the other slice of bread. Season with more furikake.
- Layer the sliced cucumber on top of the tuna salad, season with salt. Place lettuce on top of cucumber.
- Combine both toasts, slice in half, and serve.
