Furikake Tuna Salad Sandwich

Ingredients:

Furikake tuna salad
  • 1 4 oz can of tuna, packed in olive oil
  • 1 tbsp kewpie mayo (or mayo of choice)
  • 1-2 tsp sriracha
  • Juice of ½ lemon, more to taste
  • 3-4 sprigs dill, finely chopped
  • 1 tbsp furikake
  • 1 stalk green onion, finely chopped
  • 1 tbsp chopped pickled ginger
  • Salt & pepper, to taste
To serve
  • 4 slices bread, toasted
  • Avocado slices
  • Crispy lettuce
  • Thinly sliced cucumber
  • More furikake

Directions:

  1. Mash the canned tuna in a bowl with a fork until there are only small chunks.
  2. Add kewpie mayo, sriracha, lemon juice, dill, furikake, green onion, pickled ginger, and a pinch of salt and pepper. Mix until completely incorporated. Adjust with salt, pepper, and more lemon to taste.
  3. Spread the tuna salad on toasted bread. Place mashed or sliced avocado on the other slice of bread. Season with more furikake.
  4. Layer the sliced cucumber on top of the tuna salad, season with salt. Place lettuce on top of cucumber.
  5. Combine both toasts, slice in half, and serve.
