Espresso Martini with Sumo Citrus-Infused Tequila

Ingredients:
Sumo citrus-infused tequila
- 1 ½ cups silver tequila
- ½ sumo citrus, cleaned and sliced
Espresso martini
- 1 oz coffee liqueur
- 1 oz espresso or strong coffee, cooled
- ½ - ¾ oz simple syrup (depends how sweet you like it)
- Sumo citrus peel
- Coffee beans, for garnish
Directions:
- SUMO CITRUS-INFUSED TEQUILA: In a jar, add the sumo citrus slices and tequila. Seal and place in the jar for 24-48 hours. Strain through a cheesecloth or fine mesh sieve and keep in the fridge until ready to use.
- ESPRESSO MARTINI: 5-10 minutes before making the cocktail, place a coupe glass in the freezer.
- In a cocktail shaker, add the sumo-citrus infused tequila, coffee liqueur, espresso, and simple syrup (if using). Add a large handful of ice.
- Lid the cocktail shaker and shake vigorously for a minute, or until the shaker is very cold.
- Remove the glass from the freezer, and rub the citrus peel around the lip of the coupe, squeeze to release some of the sumo citrus fragrance.
- Strain the espresso martini into the coupe. Garnish with espresso beans.
