Crunchy Green Beans and Mushrooms with Dill Tahini Dressing and Garlic Breadcrumb Topping

Ingredients:
Crunchy green beans and mushrooms
- 1 lb green beans, cleaned and tips removed
- 8 oz cremini mushrooms (or mushrooms of choice), stem removed and quartered
- 2 tbsp butter
- Olive oil
- Salt and pepper
Dill tahini dressing
- ¼ cup tahini
- ½ cup dill sprigs
- ¼ cup lemon juice
- 1 tsp preserved lemon paste (optional)
- 1 tbsp honey
- ¼ cup olive oi
- Salt and pepper
- Water, to thin
Garlic breadcrumb topping
- ¼ cup olive oil
- 3-4 garlic cloves, thinly sliced
- ⅓ cup panko bread crumbs
- ½ tsp chili flakes
- Salt and black pepper
Directions:
- CRUNCHY GREEN BEANS AND MUSHROOMS: Bring a large pot of water to a boil and season liberally with salt. Prepare a large bowl with ice water.
- Blanch the green beans in the boiling water for 2 minutes, then drain and plunge immediately in the ice bath. Keep in the ice bath until the beans are completely cool, then drain the water.
- Heat a large pan over medium-high heat. Once hot, add just enough olive oil to coat the bottom of the pan, then add the mushrooms
- Sauté until golden brown, then season with salt and pepper. Add 2 tbsp butter and continue cooking until deeply caramelized. Remove from heat.
- DILL TAHINI DRESSING: In a small blender (or using an immersion blender), blend the tahini, dill, lemon juice, preserved paste, honey, and olive oil. Add a tbsp of water at a time to thin the consistency as desired. Season to taste with salt and pepper.
- GARLIC BREADCRUMB TOPPING: In a small saucepan or cast iron, add the olive oil and garlic cloves and heat over medium, stirring the garlic cloves frequently.
- Once the garlic cloves are lightly golden, remove them onto a plate. Add the panko breadcrumbs to the olive oil, reducing the heat slightly.
- Stir the breadcrumbs until they're golden brown, then remove from the heat and stir in the chili flakes, crispy garlic, and a pinch of salt and black pepper.
- Serve the green beans on a plate, drizzle with the dill tahini dressing, and sprinkle with the garlicky breadcrumb mixture.
