Crunchy Green Beans and Mushrooms with Dill Tahini Dressing and Garlic Breadcrumb Topping

Ingredients:

Crunchy green beans and mushrooms
  • 1 lb green beans, cleaned and tips removed
  • 8 oz cremini mushrooms (or mushrooms of choice), stem removed and quartered
  • 2 tbsp butter
  • Olive oil
  • Salt and pepper
Dill tahini dressing
  • ¼ cup tahini
  • ½ cup dill sprigs
  • ¼ cup lemon juice
  • 1 tsp preserved lemon paste (optional)
  • 1 tbsp honey
  • ¼ cup olive oi
  • Salt and pepper
  • Water, to thin
Garlic breadcrumb topping
  • ¼ cup olive oil
  • 3-4 garlic cloves, thinly sliced
  • ⅓ cup panko bread crumbs
  • ½ tsp chili flakes
  • Salt and black pepper

Directions:

  1. CRUNCHY GREEN BEANS AND MUSHROOMS: Bring a large pot of water to a boil and season liberally with salt. Prepare a large bowl with ice water.
  2. Blanch the green beans in the boiling water for 2 minutes, then drain and plunge immediately in the ice bath. Keep in the ice bath until the beans are completely cool, then drain the water.
  3. Heat a large pan over medium-high heat. Once hot, add just enough olive oil to coat the bottom of the pan, then add the mushrooms
  4. Sauté until golden brown, then season with salt and pepper. Add 2 tbsp butter and continue cooking until deeply caramelized. Remove from heat.
  5. DILL TAHINI DRESSING: In a small blender (or using an immersion blender), blend the tahini, dill, lemon juice, preserved paste, honey, and olive oil. Add a tbsp of water at a time to thin the consistency as desired. Season to taste with salt and pepper.
  6. GARLIC BREADCRUMB TOPPING: In a small saucepan or cast iron, add the olive oil and garlic cloves and heat over medium, stirring the garlic cloves frequently.
  7. Once the garlic cloves are lightly golden, remove them onto a plate. Add the panko breadcrumbs to the olive oil, reducing the heat slightly.
  8. Stir the breadcrumbs until they're golden brown, then remove from the heat and stir in the chili flakes, crispy garlic, and a pinch of salt and black pepper.
  9. Serve the green beans on a plate, drizzle with the dill tahini dressing, and sprinkle with the garlicky breadcrumb mixture.
